Chef Éloise Renaud

Éloise grew up in a farmhouse kitchen outside Lyon, where her grandmother taught her that a meal is never just food — it is attention, memory, and generosity given form. She carried that lesson through two decades of professional kitchens, from her apprenticeship under the legendary Paul Girard in Paris to residencies in Tokyo and San Sebastián. In 2006, she founded Maison Dorée with the ambition of creating a restaurant that felt genuinely French in spirit — rigorous, warm, and rooted in the seasons — but free to travel wherever great flavours demanded.

Our Team & Philosophy

Behind every extraordinary meal is a team of forty-five devoted professionals: sous chefs, pastry artists, sommeliers, and hosts who share a single standard — excellence without ego. Head Sommelier Luca Ferri oversees a cellar of over 800 labels, with a particular passion for small-production Burgundy and emerging Georgian natural wines. Pastry Chef Anaïs Bouchard — trained at Ferrandi Paris — creates desserts that are at once technically dazzling and emotionally resonant. Every member of the floor team completes a full two-week immersion in the kitchen, so that the service you receive is informed by a deep understanding of what is on your plate.
